NANTUCKET BAY SCALLOPS

Nantucket Bay Scallops are considered by many gourmets to be the finest of the five eastern species. They are juicier and sweeter than all of the others.  Here at Glidden’s, Nantucket Island’s oldest seafood market, we have carefully selected and packed the premium scallops taken from mid-winter’s catch. Due to the icy cold water, these scallops are the plumpest and tastiest. Nantucket Bay Scallops contain about 15% protein by volume, with only 0.7% fat, 140 calories, and 0.7 grams of sodium in a 7 ounce serving. Allow 7 to 8 ounces for a main course and 3 ounces for an appetizer.

To Serve:  It’s very important not to overcook scallops!  Simply sauté them for 3 to 4 minutes, just heating them through.  Scallops are equally delicious served raw with lemon juice.

BROILED NANTUCKET BAY SCALLOPS

• Place the scallops in a flat pan.
• Splash with white wine and squeeze with fresh lemon juice.
• Cover lightly with bread crumbs and sprinkle with grated parmesan cheese.
• Dust with paprika.
• Dot with butter and broil for about six minutes.

NANTUCKET BAY SCALLOPS OVER PASTA

• 1/2 lb. linguini (dry), then boiled
• 2 cloves garlic, minced
• 1/2 cup sour cream
• Dash red pepper
• 1 lb bay scallops
• 1/2 stick butter
• 1 teaspoon dry mustard
• Fresh parsley

DIRECTIONS:
Melt butter in skillet; add minced garlic, mustard, pepper. Add scallops and simmer for four to five minutes. Fold in sour cream. Pour over pasta, garnish with parsley and serve immediately.
